These photos were taken for the same job. The workshop here supplies knifes to the shop in Tsukiji, only cooking knives though, not long tuna knives. I think those techniques are a little too sensitive to photograph.
Many Japanese craftsmen sit on the floor and hold the work with their feet. This guy was in a little hole in the ground . . .
I destroyed a pefectly good t-shirt taking this photo (oil flying off the machine) . . .
The knives are about 50 to 100 dollars each at Tsukiji, probably a lot cheaper direct from the workshop. A bargain considering they are the sharpest knives you’ll ever use! Don’t ask if they are available on the internet, the couple who run the workshop are in their 70s . . .

The knives you carried in this picture it is large, how come those knives sale in the stores were short. Where can I find these large long knives in this picture.
